Banana Fig Energy Bites

I work out...a lot! Some days I spend 3+ hours at the gym. And I'm normally up early in the morning so that I can get to the gym early in the morning.  With that said, I need a quick, satisfying, and easy breakfast that I can grab and eat quickly so that I'm out the door quick. These little protein energy bites, chock full of carbs and healthy fats for energy, and also protein for repairing the muscle damage inflicted during my workouts fills the bill perfectly.  I make these during the weekends, and store them in the freezer. Come morning, I grab 3 or 4 of these little babies with a banana and believe it or not, I'm good for hours at the gym!

1/2 cup creamy peanut butter
1/3 cup honey
1/2 tsp vanilla
1 very ripe banana, mashed
3/4 cup uncooked quick oats
1/4 cup ground flax seed
1 tbsp chia seeds
1/4 tsp salt
1/4 cup cocoa powder
1/2 cup chopped figs


Combine peanut butter, honey, vanilla and mashed banana.
Combine oatmeal, flax seed, chia seeds, salt, cocoa powder, figs and add to peanut butter mixture
Form into balls using small cookie scoop (about 1 tablespoon)
Store in fridge or freezer.
