Coconut Oatmeal Energy Bites

I love energy bites, or energy balls, whichever you prefer to call them! Easy to make and so handy to have on hand! They're great for when you need to rush out the door to exercise but you don't have time to prepare anything to eat! This is just one of several recipes for energy bites that I make on regular basis. As a matter of fact, I have another version that almost identical...the other one has cocoa powder, while this one does not.


2/3 cup unsweetened coconut
1 cup oatmeal
1 tbsp chia seeds
1/2 cup flaxseed
1/2 cup peanut butter (smooth or crunchy)
1/3 cup honey
splash vanilla



spread coconut out on cookie sheet and toast in oven for just a few minutes until slightly browned and fragrant. Combine coconut with oatmeal, chia and flax. Mix together peanut butter, honey, and vanilla. (I just use a measuring cup). Add wet ingredients to dry, combine and chill for 30 minutes or so for it to firm up. Using small cookie scoop, form into balls. Store in freezer.
