Shortbread Cookies, Simple But So Tasty

If other households are anything like ours, nothing says Christmas like a batch of Shortbread Cookies straight from the oven!



Shortbreads originated in the United Kingdom, and in a maneuver to outsmart the tax man, bakers classified these sweet little confections as 'breads', to avoid the taxes placed on biscuits!  They were smart cookies  ;-)  (Sorry, couldn't resist...lol)

These cookies are so good and so versatile...you can add chocolate chips, you can add sprinkles...you can cover them in icing, you can dip them in chocolate.  No matter what you do to them, they always end up the same way - delicious!

1 lb    butter
1 C    icing sugar
1/2 C cornstarch
3 C    flour

Cream butter.  Add icing sugar, cornstarch, flour.  Mix well.  Roll out to about
1/4" and cut out cookies in whatever shape you like.  Bake at 350F for 10 minutes.
