Sweet and Delicious Peanut Butter Chocolate Fudge



I absolutely adore fudge - brown sugar fudge, maple fudge, chocolate fudge, etc...you get the idea! But I especially enjoy making and eating fudge over the holidays.


Well, just down the street there is an Irving convenience store, where they have the most delicious Peanut Butter Chocolate Fudge.  We both like it, so I set out to find a reasonable copy.  And I believe I found it! This fudge is so smooth and creamy!  So good!  I must say, this will be a common fixture at our place during the Christmas break  :-)






1-10oz bag peanut butter chips
1-10oz bag semisweet chocolate chips
1/2 cup butter
4 1/2 cups sugar
2-7oz jars marshmallow fluff
1 1/2 cups evaporated milk
2 tsp vanilla

Line a 13x9 baking dish with foil.
Using two large bowls, pour peanut butter chips in one bowl, and chocolate chips in the other.
Melt butter in very large saucepan. Add sugar, fluff, and milk.  Cook over medium heat, stirring constantly.
Bring mixture to a boil, and stir continuously for 5 minutes (or until mixture reaches soft-ball stage ~116C).
Immediately remove from heat and add vanilla, stirring quickly to incorporate.
Carefully, slowly, pour half the mixture in with peanut butter chips and other half with chocolate chips.
Quickly stir peanut butter chips to soften and melt into smooth mixture.  Pour into prepared baking dish.
Quickly stir chocolate chips to soften and melt into smooth mixture.  Very slowly and gently, ladle chocolate mixture onto peanut butter layer.
Let fudge sit at room temperature for 5 or 10 minutes to cool.
Place in fridge for at least 4 hours to set up.
